Especially in the cold season, soups are just great! With the low-calorie tomato soup with popcorn garnish, you can feast on it and do something for your figure at the same time - and that in winter!
Ingredients for the low-calorie tomato soup
- 3 medium carrots
- 1 handful of cocktail tomatoes
- 1 pint of vegetable broth
- ½ onion
- Some tasteless popcorn
preparation
First the popcorn without added sugar or salt with the popcorn loop prepare and set aside. For the soup, first grate the carrots and cook them in vegetable stock for about 10 to 15 minutes until soft. Halve the cocktail tomatoes, add them to the soup and take them out again after about half a minute and skin them. The skinned tomatoes and half an onion are now cut into wedges and added to the soup and boiled down for about 15 to 30 minutes. If there isn't enough liquid, add more broth if you like.
After the cooking time, crush the soup with a hand blender or blender and bring to the boil again. If the soup isn't the right consistency, make up for it with broth. Finally, garnish the hot soup with the popcorn and enjoy!
